Once done, let it cool for a few minutes before slicing and serving. Another fantastic recipe to try is for roasted cauliflower soup. This is perfect for those chilly evenings when you want something warm and comforting. Preheat your oven to 400 degrees Fahrenheit. Cut one head of cauliflower into small florets and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for 20-25 minutes or until browned. In a large pot, melt 2 tbsp of butter and add in diced onion and garlic. Once the onions are translucent, add in 4 cups of chicken or vegetable broth and the roasted cauliflower. Bring to a boil and then let it simmer for 15-20 minutes. Once done, use an immersion blender to blend until smooth. Serve with a dollop of Greek yogurt or sour cream. Lastly, let’s talk about a delicious low carb chocolate cake. This cake is so fudgy and delicious, you won’t even realize it’s low carb! Preheat your oven to 350 degrees Fahrenheit. In a medium-sized bowl, mix together 1/2 cup of melted butter, 1/2 cup of unsweetened cocoa powder, 1/2 cup of almond flour, 1 tsp of baking powder, and 1/4 tsp of salt. In a separate bowl, beat 3 eggs until fluffy. Add in 1/2 cup of Swerve sweetener and 1 tsp of vanilla extract. Mix together until combined. Combine the wet and dry ingredients and mix until smooth. Pour the batter into a greased 8-inch cake pan and bake for 20-25 minutes or until a toothpick comes out clean. Let it cool before slicing and serving.
